Cauliflower crust pizza

This yummy pizza has no grains  so is low in carbs, perfect for a low carb, paleo or ketogenic type lifestyle. The base is made from cauliflower and is very easy to make.

Just out of the oven

Recipe.

For the crust.

One medium cauliflower.

One egg.

One cup grated cheddar cheese.

Salt pepper and dried herbs.

For the toppings.

Cheeses, both cream cheese ( Philadelphia) and tastycheddar.

Capers.

Tomato sauce , homemade so no sugar.

pepperoni,

Spinach.

Olives.

Put cauliflower florets (a few at a time) in kitchen whizz and blitz until it looks like snow or rice. Add a couple of centimetres of boiling water, cover and cook for about 4 or 5 mins


Drain through a sieve and allow to cool a bit


Empty onto a clean tea towel or cloth and squeeze as much water out as you can.


Empty into a bowl and add the egg, grated cheese and herbs and spices.


Squidge together with your hands until well mixed then empty out onto baking paper


Press down and spread out until about 1/2 cm thick, you can use another piece if bake paper and a rolling pin to help. Make the edges a bit thicker.


Bake at 180 fan bake for about 15 mins until golden and crispy


Gather all your toppings, I am using a quick home made tomato sauce, just reduce half a tin of chopped tomatoes down with olive oil until thick and yummy, capers, olives, pepperoni, cream cheese, cheddar cheese and spinach.


Pile everything on


Then bake in a hot oven for about 15 mins, until the cheese is melted and fabulous.


Then eat.

makes six large serves, carbs per serve 8.5gms
