Flax seed crackers

imageThese simple salty crackers fill the low carb need for something crunchy to pile pâté, dips and cheeses onto.

Ingredients.

2 cups of flax seeds.

1 rounded teaspoon  of salt.

2.5 cups of water.

Soak the flax seeds over night in the water and the salt. Prepare an oven tray or two with baking paper, the thicker non stick type is what you need, there is enough with this recipe to do one and a half full size baking trays.  Pour the mixture on to the paper and spread it evenly with the back of a spoon. You want it to be just a few millimetres thick. Put the trays into the oven set at 150c and bake for about 30 to 40 mins. They need to be completely dry, when they are nearly dry you can peel the paper off and return them to the oven to completely dry. Often near the end of the time I will simply turn the oven off and leave them in to dry.

When completely dry break the pieces into random shapes and store in an air tight container until you need a crunchy base for your Labna or other toppings.

Flax seeds are rich in omega three oils but they are 29% carbohydrate so you need to limit them if you are on a low carb diet. This whole batch of crackers contains 100gms of carbs, but you only need a few to satisfy your need for crunchy deliciousness.
